A homemade twist on the Chinese pork fried rice take out.
Chicken Fried Rice
Chicken Fried Rice
Makes: 2 large servings or 3 small servings
Ingriedients:
1/2 cup dry brown rice
3 strips of bacon
1 chicken breast
1 carrot, cut into 1/4 inch pieces
2 TBS minced onion
1 egg
1/8 tsp black pepper
1/2 tsp garlic salt
2 TBS reduced sodium soy sauce
2 to 3 TBS olive oil
1 scallion chopped, for garnish
1. Cook the rice according to package directions.
2. Preheat the oven to 450 degrees Fahrenheit. Bake the chicken breast and bacon in the oven. The chicken should bake for 20 minutes. Keep an eye on the bacon it bakes quick, take it out when it is crunchy, around 5 minutes.
4. In the meantime, prepare your veggies in the ingredients above.
3. Once the chicken and bacon are ready and cooled a bit, cut the bacon into small pieces and cube the chicken into small bite sized pieces.
4. Once the veggies, chicken, and bacon are cut, and the rice is cooked heat a skillet with the olive oil.
5. Add the onion and carrot and cook until the onion is translucent on medium heat. Add the chicken, bacon, and brown rice and cook until everything is reheated.
6. Make a well in the middle of the skillet and add the egg. Scramble the egg in the well and then mix it in with everything else.
7. Add all the spices and soy sauce and mix together.
8. Garnish with scallion and serve with a side salad!
